Tomato Basil Soup

Ingredients

· 1 cup Healthy & Fresh Tomato Puree
· 1 small onion, chopped
· 2 cloves garlic, minced
· 1/4 cup fresh basil leaves, packed
· 2 cups vegetable stock or water
· 1/4 cup fresh cream
· 1 tbsp butter or olive oil
· 1 tsp sugar (optional, to balance acidity)
· Salt and black pepper to taste

Instructions

1. Heat butter or oil in a pot. Add the chopped onion and garlic, and sauté until soft and fragrant.

2. Pour in the Healthy & Fresh Tomato Puree and vegetable stock. Bring to a boil, then reduce heat and simmer for 10-15 minutes.

3. Add the fresh basil leaves and let the soup cool slightly.

4. Using a blender, puree the soup until completely smooth.

5. Return the smooth soup to the pot. Stir in the fresh cream and season with salt, pepper, and sugar if using. Heat through gently without boiling.

6. Serve your creamy Tomato Basil Soup hot, garnished with a swirl of cream and a fresh basil leaf.
