Creamy Mushroom Masala

Ingredients

· 1 can (450g) Healthy & Fresh Button Mushrooms, drained
· 1/2 cup Healthy & Fresh Tomato Puree
· 1 large onion, finely chopped
· 2 cloves garlic, minced
· 1-inch ginger, grated
· 1/2 cup fresh cream or cashew paste
· 1 tsp cumin seeds
· 1 tsp turmeric powder
· 2 tsp coriander powder
· 1 tsp garam masala
· 1/2 tsp red chili powder
· 2 tbsp cooking oil
· Salt to taste
· Fresh coriander leaves for garnish

Instructions

1. Heat oil in a pan. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until golden brown. Add minced garlic and grated ginger, and cook for another minute.

3. Add the Healthy & Fresh Tomato Puree and all the dry spices (turmeric, coriander, red chili powder). Cook until the oil starts to separate from the masala.

4. Add the drained Healthy & Fresh Button Mushrooms to the pan. Mix well so the mushrooms are coated in the masala. Cook for 5-7 minutes.

5. Pour in the fresh cream or cashew paste. Stir continuously and let the curry simmer for 5 minutes until it becomes creamy and thick.

6. Sprinkle garam masala and garnish with fresh coriander leaves. Your creamy Mushroom Masala is ready to be served hot with rice or roti.
