Rajma Masala Rice Bowl

Ingredients
· 1 can (450g) Healthy & Fresh Red Kidney Beans (Rajma), drained and rinsed
· 1/2 cup Healthy & Fresh Tomato Puree
· 1 large onion, finely chopped
· 2 tomatoes, finely chopped
· 1 tbsp ginger-garlic paste
· 1 tsp cumin seeds
· 2 bay leaves
· 1 tsp red chili powder
· 2 tsp coriander powder
· 1/2 tsp turmeric powder
· 1 tsp rajma masala (or garam masala)
· 2 tbsp oil
· Salt to taste
· Fresh coriander for garnish
· Cooked rice for serving
Instructions
1. Heat oil in a pressure cooker. Add cumin seeds and bay leaves, and let them sizzle.
2. Add the chopped onions and sauté until golden brown. Add the ginger-garlic paste and cook for another minute.
3. Add the chopped tomatoes and cook until they turn soft and the oil begins to separate.
4. Stir in the Healthy & Fresh Tomato Puree, red chili powder, coriander powder, and turmeric powder. Cook the masala for 4-5 minutes.
5. Add the drained Healthy & Fresh Red Kidney Beans, salt, and 1 cup of water. Mix well.
6. Close the pressure cooker lid and cook for 3-4 whistles on medium heat.
7. Let the pressure release naturally. Open the lid, add the rajma masala, and simmer for 2-3 minutes. If the gravy is too thick, add a little hot water.
8. Garnish with fresh coriander and serve your delicious Rajma Masala hot with steamed rice.
